| CARBONATION BY BOTTLE FERMENTATION: 1. The product will be dry because the sugars will be fermented to form the bubbles during the fermentation. 2. Let sit until clear. Rack the cider base into a clean sterile primary fermenter, leaving the yeast sediment behind. 3. Do not filter, do not add packets #3 & #4 and do not add any sugar 4. Add the Vinoka Natural Flavor Mix. Use some cider to rinse the bottle and add the mixture to the batch so no flavor is lost in transition. Gently stir your cider to mix in flavor. The concentrate in the flavor mix contains the sugar needed for the bottle fermentation. 5. Siphon into sterilized bottles. We recommend using PET bottles which will not break when CO2 pressure builds. Make sure all bottles are capped tightly. 6. Keep bottles at room temperature. Fermentation will start within a few days, CO2 pressure will increase over the next 2 to 3 weeks, fermenting all sugar. You may wish to experiment, finishing the last half of the fermentation in a refrigerator to retain some residual sugar for taste balance. Still Cider Press Ciders do not need a carbonating keg and are bottled without carbonation into regular wine bottles. |
